I AM WHOLE30

Thanksgiving was so much fun! We had such a great time hanging out with family and exploring Caddo Lake with Emma.  When we got there Wednesday night my Aunt made chili so I had chili with avocado! YUMMY   Thursday morning my Aunt made fresh fruit, bacon, and got special crustless dairy free quiche for me! Thursday for Thanksgiving lunch everything I had was totally Whole30 compliant.  I made roasted brussel sprouts with cranberries, squash and zucchini with sauteed onions, roasted pumpkin spice sweet potatoes, and broccoli and carrot salad with delicious baked turkey! It was so good I didn't even miss the dressing or rolls. I did make a paleo pecan pie and it was SOOO good but so dangerous. The paleo pecan pie made me realize I can't do paleo treats because I ate too much of it. Even natural sugar is gonna be my downfall - paleo isn't calorie free and it definitely made my tummy sad.  Friday I ate whole30 compliant but I had abou

I completed my 60 days on Whole30 Thursday! I am now strictly eating Whole30/Paleo compliant until January then I am starting round 3. Today I decided to treat myself after that 60 day period I decided I deserved chocolate! This is a Hail Merry Chocolate Miracle Tart  and HOLY COW was it awesome!  Made with just 5 ingredients:   organic maple syrup, dark cocoa, almond flour, organic extra virgin coconut oil, sea salt. I only ate half of it and saved the other half for later. SO YUMMY  The rest of my day was a typical whole30 day.  Breakfast was leftover cabbage, potatoes, and sausage with scrambled eggs  Lunch was leftover cauliflower spanish rice topped with chipotle beef and avocado Dinner was chili with onions and avocado  While I was shopping at Drug Emporium I also got some  honey, maple syrup, and almond flour for my Paleo baking creations this week, as well as more ghee, coconut oil, and so

Green Chili Chicken Stew

On Friday I made roasted chicken for dinner and we only ate half of it so tonight I decided to turn the rest of the chicken into some yummy stew. If you don't make this stew your life will not be complete. Green Chili Chicken Stew - 1/2 onion chopped - 3 chopped serrano peppers - 2 small cans of hot green chilis - 1/2 a jar of tomatillo salsa - organic free range chicken stock - cumin - shredded chicken - roasted chicken juices - 4 red new potatoes chopped into bite size pieces Sauté the onion and peppers then add in the canned green chili, salsa, and cumin Add the chopped potato and stew with a lid until the potato is tender  Then add in your chopped roasted chicken and leftover roasting juices  (you could use a rotisserie and you wouldn't have the roasting juices but I am sure it will still be delicious)  I served mine with avocado and cilantro  It was the BEST thing I have had in a long time. SO good

I think it is time to focus on some non scale victories. I weigh myself everyday sometimes twice and three times a day. Im obsessed with the scale. I hope that every time I step on the scale I will have lost weight. I am SO PROUD that I have been able to lose 83 pounds and I am now under 200 pounds for the first time as an adult. HOWEVER- When I weigh the same or I fluctuate up a pound I beat myself up. It has started to be a source of self abuse in a way. While I do want to be conscious of everything I am doing to be as healthy and fit as I can my weight alone doesn't define that. SO here are reasons I am AWESOME that have NOTHING to do with how much I weigh. 1. I workout at least 5 times a week 2. I run/jog a mile at least 3 times a week 3. I just bought a whole new set of clothes in a size LARGE for the first time ever 4. I am going to have my first Paleo Thanksgiving and I am not upset about not having dressing or traditional pie! 5. I have been eating Whole
