Round 2: 1st Five Days

DAY ONE:  Breakfast was scrambled eggs with spinach and roasted sweet potatoes    Lunch was a quick snack type meal because it got late. I had some dates and pecans.  For dinner I made steak stir fry with frozen stir fry veggies, water chestnuts, bamboo shoots, and bean sprouts. Sauteed the steak with onions, garlic, and coconut oil then added in all the veggies and seasoned.  DAY TWO:  I only had half a banana for breakfast this morning and some coffe! BORING For lunch I had a roasted acorn squash filled with spinach and eggplant marinara  For dinner I sauteed zucchini, made guacamole, and baked chicken with chipotle powder and salsa verde  This salsa verde is whole30 approved!  DAY THREE:  Breakfast was SO good today. Whole30 Round Two!

Well my five day eat whatever I want break was actually not as great as I thought it would be. My stomach hurt. I felt overly full when I ate dairy and grains. I had gas pain. AND strangely I missed fruits and veggies. Whole30 really changed me. I had a chocolate chip cookie and took one bite and gave the rest to Chris because I thought it was gross. I had my moms banoffee pie and it was DELICIOUS, that I did love, but it was RICH and after I ate a huge piece my belly hurt. When we went hiking on our trip we brought trail mix and apples and seriously the best thing I ate over the five days was probably that giant green apple! And being active and going on a 6 mile hike followed by canoeing was so much fun! I know that about  four months ago I wouldn't have been able to spend a whole day hiking and canoeing without dying!  I did gain some weight from my five days Obviously I am not going to let a little weight gain depress me, because it a

FOOD- Week 5

I love Kroger's Simple Truth organic line and it is really pretty reasonably priced. Kroger has a great produce and health food section and it makes shopping for paleo/whole30 foods really easy!  This week I got chicken, ground turkey, ground beef, and chicken sausage  Organic raisins, onions, broccoli slaw, snap peas, limes, dark roast coffee, salsa  bananas, tomato sauce, carrots, acorn squash, avocado cage free eggs, sweet potatoes, roasting veggie box, and cherry tomatoes  Monday night we had applegate farms hot dogs with sauerkraut, peppers and onions, and mustard I sautee the onions and peppers in coconut oil  boil the organic sauerkraut with celery seed, caraway seed, and marjoram  This photo doesn't look great but it tasted AWESOME  Tuesday for lunch I had chipotle baked chicken, roasted veggies, and avocado with salsa  Tuesday for dinner I had baked chicken topped with eggplant a
