BOOM!
I DID IT! 30 days
- no sugar (well except for the four iced coffees I got that had hidden sugar in them... thanks starbucks)
-no grains
- no dairy (except once I had fajitas in Austin that I am sure were cooked in butter)
DAY 30 MEALS
Breakfast I made fauxtmeal
I ground almonds
toasted them with coconut flakes
added cinnamon and raisins
and then added mashed banana and coconut milk. It was so good! Even Emma ate like half of it.
Lunch was truly the best thing ever. I made chicken salad.
I baked a chicken breast with chipotle powder.
Diced mango, avocado, onion, and serrano
Mixed it with the diced chicken and lime juice.
WHOA AMAZING
With a coconut la croix it truly tasted like I was in the Caribbean
Dinner
I made chipotle lime salmon with coconut curry snap peas and carrots.
I didn't take a photo of the final plate because I was hungry and ate it before I remembered
DAY 31 MEALS
Breakfast was roasted sweet potatoes, baked prosciutto egg cups, and strawberries and pineapple
Perfectly cooked runny yolk!
Lunch was curried tuna salad
1 can of tuna
2 boiled eggs
1/4 of onion chopped
(the rest I didn't really measure I just mixed to taste)
mustard
curry powder
cayenne
raisins
pepitas
Mix it all up and serve over lettuce.
Dinner was baked ribs and roasted brussel sprouts
I baked the ribs at 250 for two hours uncovered, then topped them with barbecue sauce and covered the dish with foil and baked an additional two hours.

Here is one with just two ingredients (I started with this and then opted to add the extras below)
I just mixed mine to taste with things in the pantry
Organic tomato paste
Organic balsamic
Organic tomato sauce
spices (I used a blend of a bunch of stuff but mostly chipotle powder)
Mustard
Organic apple fig baby puree pouch (sounds weird but since you can only use fruit to sweeten I promise it is worth it)
I recommend you make the sauce ahead of time because it gets better the longer it sits in the fridge.
