I FEEL BEAUTIFUL AND THINK I AM
You know those thoughts and ideas that creep into your head when you are half awake at 6 am because you woke up with your regular body schedule but wanted to sleep late because it is Saturday morning?
Well I had some really good thoughts this morning about my weight loss goals. Basically here is the conversation my brain and I had "You can do anything you want you must believe in the power of positive thinking. This is not hard it just takes determination and your mind must believe it is possible. This is a mental game! My body is totally healthy. I have nothing holding me back accept for the back issue and now my fever blisters which I could workout through but chose not to. I do chose to change my life and be active and healthy and I want to make sure that I am mentally at that place everyday."
Then I fell back asleep! Yeah that conversation in my head was a good one. I really need to understand that the only thing that holds me back from change is my mind.
Once I woke back up it was time to make coffee and breakfast. This morning I landed on the pumpkin french toast but decided to do it in the oven which I had never done before. I was nervous because I didn't use a recipe, but I did write it down so you can make my version of ....
BAKED PUMPKIN FRENCH TOAST
4 Eggs (you could use egg sub but I used organic brown eggs and felt good about it!)
8-10 drops of Vanilla Stevia (or other sweetener)
1 tsp. good vanilla (I used some I just got in Cancun)
2 tsp Cinnamon (next time I would add more)
1/2 tsp Nutmeg
1 cup skim milk
4 heaping TBS of canned Pumpkin (or 1/4 cup but with my TBS I didn't level them I just scooped it up so there is a little more than an exact 1/4 cup)

8 Pieces of whole wheat bread cut into cubes
Walnuts
Sugar Free Syrup
If you can find Sweet Leaf you should really buy some. It tastes really good and sweet and they come in flavors. I got Vanilla so I can bake with it and use it in coffee etc. Thy also make like fruity flavors which I heard is good in sparkling water so you have a fruity soda like drink with all natural sweeteners and zero calories!
I am not sure why but this makes me feel healthier even though I am sure it makes no difference. I saw on Nadia G that brown eggs are from chickens with red ears... WEIRD
The secret to amazing vanilla flavor is buying vanilla from Mexico. My mom has always asked anyone going to mexico to bring back good dark mexican vanilla because it is truly the best. Look at how dark that is. I was so excited to buy this stuff in Cancun.
Mix all your ingredients together and then toss in bread cubes and mix well. Dump into a PAM sprayed baking dish and top with a few walnuts (pecans would be great too) and bake at 360 for 30-40 min.
