Major victories, blueberry eggs, and Moroccan chicken!

This week has been full of some MAJOR non scale victories. 

I set two person records with my running. 

First I ran a 9:38 mile! When I started running my goal which seemed completely unattainable was to run a 10 minute mile. I BEAT THAT!!!!


So then two days later I told myself - try to keep your pace for twenty minutes. I had to talk to myself out loud at the gym. "YOU CAN DO IT" "DON'T STOP" "YOU AREN'T TIRED IT'S YOUR MIND" and I DID IT!!!!! Freaking crushed two miles in under 20 minutes. I truly thought that was impossible and yet I did it. 


Then two days later I went to J Crew for the first time. I never set foot into a "regular" size clothing chain because obviously I couldn't fit in any clothes there. The biggest size I could find there was a 14 but mostly everything was a size 10 and below. I grabbed these size 10 shorts and WONDER OF WONDERS MIRACLE OF MIRACLES they fit perfect. I have weird deflated fat girl thighs but I bought these shorts and I am going to wear them and not even care. 





I ended up taking home four t-shirts, two pairs of shorts, a pair of chinos, and a necklace! 


The reason I can run a 10 minute mile and fit into size 10 J Crew shorts is all thanks to the food I eat. I truly feel like a different person thanks to Whole30. 





What I have been eating this week. 




Sausage with spinach eggs and salsa verde

Chorizo with purple potatoes, onions, and fried eggs


Found these freeze dried grapes at Wal-mart. They are pretty good for a crunchy sweet treat. 



This suja water is also really good. It has cayenne, lemon, and pineapple juice. It's barely any it's like a HINT of flavor. 


Coleslaw mix with Tessemaes spicy ranch, avocado, and smoked oysters


I like to prep my week of veggies in the oven 


These purple sweet potatoes are SO pretty. 


I also love spaghetti squash. I bake mine whole at 400 degrees for about an hour. It shreds perfectly. 


Whole baked sweet potatoes that can be perfect for breakfast, lunch, or dinner


This was crock pot chicken verde. I put chicken thighs in the crock pot with poblano peppers, onions, and the rest of that salsa verde. I served it with coleslaw mix on top and avocado plus some pineapple and a few of my siete tortillas. 



Sausage and spinach eggs with salsa and fruit 



Roasted carrots, brussel sprouts, purple sweet potato, and ground beef with a little chipotle mayo on top. This was SO incredible. 


Baked mustard tilapia with sautéed green beans with toasted hazelnuts. 


BLUEBERRY EGGS!!!! 

RECIPE: 

1 mashed banana 
2 eggs beaten 
dash of cinnamon 
handful of blueberries 
1 TBS ghee 

I cooked it all together like a scrambled eggs then served it with some toasted hazelnuts. This is seriously GAME CHANGER. It was so good and a nice hot sweet treat that is completely compliant and basically a perfect swap for oatmeal.

More chicken verde! 


More blueberries with eggs! I made ground beef and mixed it with the roasted purple sweet potatoes and served it with scrambled eggs and slightly sautéed blueberries. I think cooked blueberries are WAY better than raw. They get extra sweet and juicy! 


Carrots salad and smoked oysters. 

Carrot Salad Recipe: 

Shredded carrots 
Fresh pineapple cut into tidbits 
raisins 
pecans 
homeade mayo 
curry powder 
cayenne 

I don't measure I just mix it together until it looks and tastes great! 


Roasted new potatoes, onions, chorizo, and shrimp! 


Sauteed pork, apples, and plantains. 


Portioned out for lunches this week 


Spaghetti squash with the last of the chicken verde 



My new favorite thing! TOSTONES 

These are very easy to make and SO worth it. 

Cut up a plantain and cook in coconut oil until it's golden brown. 
Take out and smash on a cutting board with the bottom of a coffee cup. 

Put back in the skillet and cook until crispy then add salt. 


I made chicken drums with allspice and habanero sauce, my version of jerk chicken. I served it with the tostones, fresh pineapple, and avocado. 




Here is that crock pot Moroccan chicken

RECIPE: 

4-5 carrots cut into bite size pieces 
1 onion sliced 
1 package of chicken thighs
1 can of coconut milk 
10 dried apricots cut in half 
5-6 dried plums cut in half 

I never measure seasonings but I added 
saffron
turmeric 
cardamom 
cinnamon 
cayenne
ginger 
salt 




Cook on low for 6-8 hours and serve with a few crispy coconut chips 



This is a new favorite recipe for sure!
