Blueberry Chia Flax Muffins
First of all can we start off by saying THIS sucks!
It sucks even worse when you have a moment with a co-worker that borders on unprofessional (AWKWARD) and you have a class period that won't stop talking UGH UGH UGH
Thank God for:
1. A patient husband
2. A hard workout
3. A hot bath
4. 1 TBS of Dark Chocolate chips FROZEN
5. Strong Coffee
Yes dopamine and endorphins!!!!!
Alright done with that little confession.
BLUEBERRY CHIA FLAX MUFFINS
This is not a recipe you can follow BUT here is the base for what I started out with and then things went wrong and I had to add in some extras to get the consistency right. AGH
3/4 cup almond milk
1/4 cup coconut oil
1/4 cup chia gel
1 1/2 cups whole wheat flour
1/2 cup ground flax seed
2 tsp baking soda
1/2 tsp salt
1 cup blueberries
NOW here is where things get tricky - this recipe was modified from this one
3/4 cup milk
1/4 cup oil
1 egg
2 cups flour
1/2 sugar
2 tsp baking soda
1/2 tsp salt
1 cup blueberries
I didn't want to use sugar or egg and I wanted to include flax so with my modifications I ended up with a bread dough..... OOPS. I decided to add in non fat greek yogurt at that point I think it was about 1/2 cup but again I didn't measure. THEN I added in about 1/2 cup more of the almond milk. I also sweetened it to taste with splenda BUT didn't measure that either!
Last thing I did was put walnuts on the top of a few muffins.
Overall you may have to experiment with this one! You can follow the original recipe or you can try my healthified version and make adjustments where needed if you are brave enough to experiment with baking ratios! I was and it paid off thankfully.
The main thing that I was most excited about was the chia gel!
I am so glad I used this - the texture was more dense but OMG in a good way.
I think I need to hire you to cook my meals lol. Everything you make looks amazing!!!
