Luau on a diet!

Tonight for dinner I was inspired by a fellow weight loss blogger you may have heard of Undressed Skeleton or Taralynn McNitt. She lost a lot of weight the right way by exercise and eating right! She has lot of recipes and good tips that I like to look at.
ANYWAY tonight I made one of her recipes I saw that sounded fabulous. Honey Coconut Shrimp. HER RECIPE HERE
Then I thought what should I serve with this? Pineapple obviously would be great with it...what about a pineapple rice!!!! So then I got some inspiration from online and just kind of took several different recipes and made it work for me. I think it was Paula Deen who said "Read a recipe and maybe follow it once but after that tweak it and make it your own!" I usually do this- recipes are a great starting point for ideas but I always love to do things different and not follow exacts just cook and feel your way through the food and taste it - if its good EAT IT! So here is my Luau themed dinner!
I cooked minute brown rice with a little coconut milk and water. I didn't measure because I don't do that like I said BUT it was obviously way more water than the coconut milk. Then microwave for like 7 minutes.
Here is where I made Taralynn's recipe my own. I decided to add more flavor I would saute them in a little coconut oil with seasoning/spice.
You can see I put a little much oil on accident but its ok because I am cooking the rice in this skillet in a minute so I need the extra oil. I placed the shrimp on a paper towel to drain a little of the excess off. I have to be careful and measure next time. The coconut oil is hard and when it melts it becomes a lot more than it looks like when its solid so be careful with it. Maybe next time microwave and then put in a skillet so you can see the amount better... OOPS. BUT no big deal the oil is healthy - we already talked about the benefits of coconut oils.
Once you take the shrimp out put in chopped onion and garlic. And saute until soft then add pineapple and more seasonings of your choice. I am using my Special Shit. Then add a little coconut milk- maybe 1/4 of a cup if even that much- literally just a little you don't want soup you just want a little flavor and its gonna get thick.
While that is thickening up and getting deliciously wonderful form your shrimp assembly line. The oven should be preheated to 350 at this point.
So dip the shrimp in the honey and then in the coconut and place on a baking dish. Bake until the coconut is brown and toasted. While that is baking add the rice to your pineapple, onion, and garlic and toast up then add green onion.
I would serve the shrimp on top of the rice because the two in one bite is AWESOME!
NOW if only I was eating it like this....
