Plant Based Diets?
As I mentioned in my last post I have become more aware of the importance of plants on my diet. I have always eaten and loved fruits and veggies so it is not a stretch for me to think about trying to eat as many as possible. Since watching Fat, Sick and Nearly Dead I have also watched Hungry for Change and Forks over Knives which are more documentaries proving the importance of a plant based diet.
I have decided that I am not going to be vegan or anything but that I am going to try to chose plant proteins over animal proteins more regularly. I am going to start taking Juice+ which my cousin highly recommended as an easy way to get a huge serving of fruits and veggies into your body daily, without having to actually EAT that many fruits and veggies. One of the things I like about Juice+ is that it's not a vitamin, medicine, weight loss product, or treatment type pill its a healthy product that bridges the gap between what your body needs and what your capable of consuming. It's getting your body the micronutrients and phytonutrients you NEED!
Im also still going to drink my Suja juices as well as trying to make more vegan meals. I know for a fact that every single meal I eat has animal proteins, be it eggs, dairy, or meat I feel like you HAVE to have some kind of animal protein for it to be a real meal. This is something I want to try to change. Tonight I have planned to make kale and chickpea coconut curry and tomorrow night I am going to make whole wheat organic pasta with mushrooms and artichokes. There are a TON of recipes out there for very hearty filling and satisfying meals that do not include any animal proteins. You can find a ton at the Forks over Knives website.
I really feel like focusing on eating as much clean, natural, non gmo, organic, fresh items as possible will make me healthy and balanced. I know that overly processed foods are not the way to go and I want to try to avoid them to the best of my ability. I have already noticed a difference in my energy since I started back on a strict health focus these last two months, but I think that going the extra effort to try more whole food nutrition and getting as much good stuff in here as possible is going to push me even further.
I will let you know how Juice+ works out for me and I will keep you informed on how my meat loving husband responds to vegan meals every once in a while!
UPDATE* Tonights vegan meal of coconut curry was husband approved.
- 1 onion
- 1 bunch of kale
- garlic paste
- coconut oil
- two cans of chickpeas
- 1 can of light coconut milk
- 1 jar of red or green curry paste (I used a little of both)
- ginger paste
- sriracha
- bare coconut chips in sweet heat for garnish
I cooked down onions, garlic, and kale with coconut oil then added in two cans of rinsed chickpeas, one can of light coconut milk, some ginger, sriracha, and curry paste and let it simmer about 20 minutes. I served it up in bowls and topped it with a few bare coconut chips.
