Whole 30: Day Nine
Totally not food related - I have hit a gym slump. I used to get excited about the gym but right now I am just tired and not excited about it. I don't know if it's because its the end of the school year and I just want to get home or what the deal is. I still went to the gym yesterday and today, but I wasn't thrilled about it. I am hoping to get over that because I know I always feel good after working out and I want to love going to the gym.

Not the best photo but it was really good. I made a breakfast casserole with ground antelope, sauteed kale and onions, and roasted potatoes. I baked it then cut it into four pieces for Chris and my breakfast a couple times this week. It's not the best for eating while driving to work though so I may have to make time to eat at home before I drive to work.
LUNCH:
I had leftover egg roll bowl, some roasted sweet potatoes, roasted broccoli, and some almond stuffed olives.
DINNER:
Yet again another reason you can go Whole 30. This is turkey stuffed mini peppers with avocado salad.
- mini peppers with top removed and seeds taken out
- organic ground turkey
- 1 organic cage free egg
- organic whole 30 approved salsa
- crushed almonds (to mimic the bread crumbs)
- seasoning of choice
Mix your turkey, eggs, salsa, seasoning and almonds together and stuff into the peppers. Place on a coconut oil greased baking sheet and bake at 405 degrees for about 20-30 minutes. I had a lot of turkey leftover so I made 2 burger patties and baked those on the same sheet for our lunch tomorrow.
The almonds give the peppers some crunch and good flavor. This is probably a new favorite meal.
