Whole 30: Day Three
I always seem to feel so much more energetic the day after I do my runs. This morning with the rain I was pretty sleepy but I definitely had more physical energy to get through the day. I started with my coffee with coconut milk while I got ready for work.
BREAKFAST:
BREAKFAST:
Tried cashew cookie larabar for the first time and it was really good! The first Sweet Beet Suja I had was GROSS to me haha but I'm actually starting to like it.
LUNCH:
I had a bun-less burger with a 1/4 of an avocado and two carrots, plus a side of grapes and green apples.
DINNER:
One of my favorite salads ever is PERFECT on Whole 30. Spinach with blueberries, strawberries, avocado, grilled chicken, and pecans. Usually I put cheese with it but it definitely has so much going on that you don't even miss the cheese. I usually make a honey lime vinaigrette but of course I can't have honey so instead....
I made a balsamic and brown mustard dressing. It worked SO well and was absolutely delicious.
What's funny is I don't even feel like I am restricted. I could probably live on meat and avocado. The only thing is you really have to cook almost every meal so you have to meal prep like crazy. Tonight while I was making dinner I was also making breakfast and my lunch for tomorrow because both had to be cooked and baked. It does make for lots of kitchen messes and piles of tupperware.
