Veggies all up in hurrr
I have been trying to eat less animal proteins just to switch things up and try to focus on eating more fruits and veggies.
Sunday night was the chickpea and kale curry.
Monday night was whole wheat pasta with mushrooms and artichokes.
Tuesday night was rice and beans.
Tonight I planned veggie spring rolls but my husband said "Don't get me wrong all these meals have been really good but can we have meat tonight?" So I made shrimp spring rolls for him!
Unfortunately my husband couldn't find sprouts or rice paper spring roll wrappers in Marshall so I stopped at the Granary in Longview and found them easily. I absolutely love the Granary and I wish I lived in Longview so I could shop there ERRRRDAY!
I prepped the fillings: baby kale, alfalfa sprouts, green onion, carrots, and avocado.

Then you just soften your rice paper in warm water and fill it up and roll.
To go with them I made a peanut sauce for dipping. It was really easy I used PB2 powder, rice vinegar, sesame oil, sriracha, and ginger paste plus water to make it more of a sauce consistency.
I also got my Juice Plus+ in the mail yesterday and started taking that this morning.
According to their research the benefits of Juice Plus are increased energy, boosted immune system, better digestion, better sleep, increased antioxidants, improved fatigue, strengthened hair and nails, improved skin, reduces chronic disease, reduces allergies, reduces colds, reduces the need for medications, and helps with weight loss. So when I took my pills this morning I basically consumed all of the nutrients from everything in the picture above! Totally crazy. I am excited to see if I notice any of the benefits mentioned after a couple of months being consistent in taking it.
